Smoked Salmon Spring Rolls

Ingredients

  • 1 jar or tin of Shoreline Smoked King or Coho Salmon
  • Rice paper wraps
  • 1 small cucumber
  • 1 avocado
  • 1 bunch chives
  • 2 oz cream cheese
  • 2 cups spinach
  • Toasted sesame seeds
  • Sweet chili sauce (optional)

Instructions

  1. Slice cucumber, avocado, chives, and cream cheese (you'll want them to be around 4 inches in length). Set the spinach and smoked salmon aside.
  2. Follow instructions on rice paper wraps to dampen wraps.
  3. Place rice wrap on a clean cutting board or flat surface. Start by layering the smoked salmon, cream cheese, avocado, chives, and spinach towards the bottom and center of the rice wrap. I usually add two slices of each and about 1 oz of smoked salmon, but you can fill your spring rolls however you prefer. Sprinkle ingredients with toasted sesame seeds.
  4. Fold in the sides of the rice paper wrap. Then, starting from the bottom, roll upwards, tucking the ingredients into the rice wrap as you roll.
  5. Serve with sweet chili sauce or sauce of choice.
