I often struggle to take appealing photos of our salmon dinners at home. My fiancé and I live in a log cabin (yes…in the woods, in Alaska), which most might imagine as quite dreamy, but during these long winter months when the sun sets around 3pm, it’s honestly just very dark. Even during daylight hours, the sun barely reaches the mountain tops, leaving us with a mere glow that barely shines into the windows of our cozy, quaint kitchen.

The seasons change fast here, even in the midst of (what feels like) the slowest year ever. But no matter the season, one thing always remains constant: we are creatures of comfort. In this house, that means whether we’re celebrating or scrambling for a last-minute meal, it’s a piece of coho salmon that we pull from the freezer. And it’s usually paired with “whatever will do”. Last night, we were grateful to enjoy it alongside the last of our veggies grown by friends and local farmers, Nick & Leah.
